As East, if you refused to ruffed the opening lead and preferred to throw a club then you would have been absolutely correct. To shorten your own trumps by ruffing one of declarer's losers is rarely good play, and here it led to declarer's defeat. South won heartA and led a club, West rising with the ace to lead another heart. This time East did ruff, switching to a diamond. South won and continued with spadeA, spadeJ, covered. After ruffing a heart with spade10 declarer ruffed a diamond, cashed spade9 and played heartA. East ruffed and South still had a heart to lose to finish one down.
