I'm no master bidder, but I believe it pays to "go for it" on these hands. Nobody knows what the correct contract is, so make your pitch and then let the opposition guess.

So you bid 5NT (you have an agreement that it shows a single suited hand!), West doubles and East bids 6NT. West converts this to 7heart and I'll tell you for free now that it is absolutely cold if partner fails to lead a diamond.
